  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 8 oz semi-sweet chocolate, melted

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix the chocolate cookie crumbs with melted butter until combined.
  3. Press the mixture into the bottom of a springform pan to form a solid crust.
  4. Beat the cream cheese and sugar together until smooth.
  5. Add in the vanilla extract.
  6. Mix in the eggs one at a time.
  7. Stir in the sour cream and melted chocolate until smooth.
  8. Pour the cheesecake filling over the crust.
  9. Bake for 50-60 minutes or until the center is set but slightly jiggly.
  10. Cool and refrigerate for at least 4 hours before serving.
