A rich and moist chocolate cake made with sour cream for a delightful balance of flavors.

Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 1 and 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large mixing bowl. Whisk them together.
  3. Add the eggs, sour cream, vegetable oil, and vanilla extract to the dry ingredients and beat on medium speed for 2 minutes.
  4. Incorporate the boiling water until the batter is well combined.
  5. Pour the batter evenly into prepared pans.
  6. Bake for 30-35 minutes, or until a toothpick comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  8. Frost with your favorite chocolate frosting and enjoy!

Notes

For best results, use room temperature ingredients and do not skip the boiling water step for a moist texture.
