  • 4 chicken thighs
  • 3 tablespoons chipotle sauce
  • 2 tablespoons honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 cup smoked Gouda cheese, shredded
  • 4 medium potatoes, peeled and chopped
  • 2 tablespoons butter
  • 1/4 cup cream or milk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Whisk together chipotle sauce, honey, salt, and pepper in a bowl.
  3. Marinate the chicken thighs in the marinade for at least 30 minutes.
  4. Heat olive oil in a skillet, then add marinated chicken skin-side down to sear.
  5. Transfer the skillet to the preheated oven and bake for 25-30 minutes until cooked through.
  6. Boil chopped potatoes in salted water for about 15 minutes until tender.
  7. Mash the drained potatoes with butter, cream, and smoked Gouda until creamy.
  8. Serve the chicken thighs with the smoked Gouda mashed potatoes and enjoy!
