A comforting yet sophisticated Chicken Scampi served atop creamy Garlic Parmesan Rice that’s perfect for date night or weeknight meals.

Ingredients

  • 2 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1/2 cup white wine
  • 1 lemon, juiced
  • 1/4 cup parsley, chopped
  • 1 cup rice
  • 2 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sear the chicken breasts, seasoning with salt and pepper until browned and cooked through. Remove and set aside.
  3. Sauté the minced garlic and red pepper flakes in the same skillet for about 30 seconds until fragrant.
  4. Deglaze the skillet with white wine and lemon juice, scraping up any bits stuck to the bottom. Simmer until reduced.
  5. Combine the cooked chicken back with the sauce and add chopped parsley.
  6. Cook the rice in a separate pot with chicken broth, bringing to a boil then reducing heat until tender, about 15 minutes.
  7. Mix in Parmesan cheese into the rice until creamy.
  8. Serve the chicken scampi over the garlic Parmesan rice, garnishing with extra parsley if desired.

Notes

Pairs well with a green salad and a chilled Sauvignon Blanc. Leftovers can be stored in the fridge for up to 3 days.
