Chicken Quesadilla is a quick and easy meal that’s perfect for lunch or dinner, customizable with your favorite ingredients.

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup bell peppers, diced
  • 1 small onion, diced
  • 4 large flour tortillas
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Sour cream and salsa for serving (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the onions and bell peppers, sauté until tender.
  2. Combine cooked chicken, sautéed vegetables, and shredded cheese in a large bowl. Season with salt and pepper.
  3. Place half of the mixture on one half of a tortilla and fold it over, pressing down lightly.
  4. Cook the quesadilla in the skillet for about 3-4 minutes on each side, or until golden brown and cheese is melted.
  5. Repeat with remaining tortillas and filling.
  6. Cut into wedges and serve with sour cream and salsa.

Notes

For a crispier quesadilla, use more oil when cooking. Experiment with different vegetables and add spices for extra flavor.
