Delicious chicken quesadillas filled with sautéed bell peppers, onions, and melted cheese, perfect for family dinners or casual get-togethers.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 flour tortillas
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Sour cream and salsa for serving

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced bell pepper and onion to the skillet. Sauté until soft, about 5 minutes.
  3. Combine shredded chicken, sautéed vegetables, and cheese in a bowl. Season with salt and pepper.
  4. Place a tortilla in the skillet and spoon some of the chicken mixture onto one half.
  5. Fold the tortilla over the filling and cook for 2-3 minutes on each side until golden brown.
  6. Repeat with the remaining tortillas and filling.
  7. Cut the quesadillas into wedges and serve with sour cream and salsa.

Notes

For a spicy kick, add diced jalapeños or chili flakes. Serve with guacamole or a crisp salad.
