2 chicken breasts, pounded thin
Salt and pepper, to taste
Flour, for dredging
2 tablespoons olive oil
2 tablespoons butter
1/2 cup white wine
1 lemon, juiced
1/4 cup capers
Fresh parsley, chopped, for garnish
Instructions
Season the chicken breasts generously with salt and pepper.
Dredge each seasoned chicken breast in flour, ensuring to shake off any excess.
In a large skillet, heat the olive oil and butter over medium-high heat. Once shimmering, add the chicken breasts and cook for about 3–4 minutes on each side, until golden brown and cooked through. Remove them from the skillet, and let them rest while you prepare the sauce.
Add the white wine, lemon juice, and capers to the same skillet. Cook for 2–3 minutes, scraping up any delicious brown bits from the bottom of the pan.
Return the cooked chicken to the skillet and let it simmer in the sauce for another minute.
Garnish the dish with freshly chopped parsley before serving.
Notes
