Delightful and comforting Chicken Enchiladas filled with tender chicken and smothered in a rich enchilada sauce.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup enchilada sauce
  • 810 flour tortillas
  • 1/2 cup diced onion
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the shredded chicken, half of the cheese, diced onion, cumin, garlic powder, salt, and pepper.
  3. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  4. Fill each tortilla with the chicken mixture, roll them up, and place them seam-side down in the baking dish.
  5. Pour the remaining enchilada sauce over the top of the rolled tortillas and sprinkle with the remaining cheese.
  6. Cover the dish with foil and bake for 20 minutes.
  7. Remove the foil, and bake for an additional 10 minutes or until the cheese is bubbly and golden.
  8. Garnish with fresh cilantro if desired and serve.

Notes

You can customize the filling by adding black beans, corn, or bell peppers. Use a rotisserie chicken for ease.
