Deliciously chewy blondies infused with Biscoff cookie butter and topped with crunchy Biscoff cookies for a nostalgic treat.

  • 1/2 cup Unsalted Butter, melted
  • 1 cup Light Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1 Large Egg
  • 1 Egg Yolk
  • 1 teaspoon Vanilla Extract
  • 1 cup All-Purpose Flour
  • 1/2 cup Biscoff Cookie Butter (Smooth)
  • 1/2 cup Biscoff Cookies, crushed
  • 1/4 teaspoon Salt
  • 1 teaspoon Baking Powder

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch square baking pan with parchment paper.
  2. Melt the unsalted butter until smooth. Set it aside to cool slightly.
  3. Combine the cooled melted butter with the light brown sugar and granulated sugar. Whisk for 1-2 minutes.
  4. Add the egg, egg yolk, and vanilla extract to the mixture. Whisk until glossy.
  5. Incorporate 1/2 cup of Biscoff cookie butter into the wet ingredients.
  6. Mix together the all-purpose flour, baking powder, and salt in a separate bowl.
  7. Combine the dry ingredients with the wet ingredients, mixing until just combined.
  8. Fold in the crushed Biscoff cookies.
  9. Pour the batter into the prepared baking pan and spread evenly.
  10. Create a swirl with the remaining cookie butter and sprinkle more crushed cookies on top.
  11. Bake for 28-32 minutes until edges are set and center is slightly soft.
  12. Cool completely before slicing into squares.

Notes

Serve warm with vanilla ice cream for an upgraded dessert experience. Can be stored in an airtight container at room temperature for up to 4 days.
