Delicious roll-ups filled with creamy shrimp and cheesy goodness, perfect for cozy dinners.

  • 8 large flour tortillas
  • 2 cups cooked shrimp, peeled and deveined
  • 1 cup Alfredo sauce (store-bought or homemade)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup frozen spinach, thawed and drained
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the garlic with olive oil for about 1 minute, until fragrant.
  3. Heat the shrimp in the skillet for 2-3 minutes.
  4. Combine the shrimp mixture with ricotta, half mozzarella, Parmesan, spinach, and Italian seasoning.
  5. Prepare the tortillas by spreading a spoonful of the filling and rolling it up tightly.
  6. Create a baking base with a layer of Alfredo sauce in the baking dish.
  7. Arrange the rolled tortillas seam-side down in the dish.
  8. Add the remaining Alfredo sauce over the tortillas.
  9. Sprinkle the remaining mozzarella cheese on top.
  10. Bake covered with foil for 20 minutes, then uncovered for 10-15 minutes.
  11. Cool for a few minutes and garnish with fresh parsley before serving.

Notes

Can use crab or lobster for a twist. Pair with salad or roasted veggies.
