  • 1/4 cup milk (whole or low-fat)
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon salt
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon chopped fresh herbs (like parsley or chives, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the well-drained cottage cheese, milk, and eggs. Whisk together until smooth.
  3. In another bowl, whisk together the all-purpose flour, baking powder, garlic powder (if using), and salt.
  4. Gradually add the dry ingredients into the wet mixture. Stir until just combined.
  5. Gently fold in the shredded cheese and any fresh herbs you are using.
  6. Pour the batter into a greased loaf pan and smooth the top.
  7. Place in the preheated oven and bake for 35-40 minutes or until a toothpick inserted comes out clean.
  8. Once out of the oven, let your bread cool in the pan for about 10 minutes before transferring to a wire rack.
