Cheddar Oven Baked Potato Skins

Crispy, golden potato skins loaded with melted cheese and crispy bacon, perfect for any gathering.

Ingredients

  • 4 large potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes thoroughly and pierce them with a fork to allow steam to escape during baking. Bake for about 45 minutes, or until tender when pierced with a fork.
  3. Once baked, allow the potatoes to cool slightly. Cut them in half lengthwise and gently scoop out some of the flesh, leaving about 1/4 inch thick skins.
  4. Brush the insides of the potato skins with olive oil and season generously with salt and pepper.
  5. Place the potato halves skin-side down on a baking sheet and bake for another 10 minutes until they’re golden brown and crispy.
  6. Remove from the oven and fill each skin with a generous amount of shredded cheddar cheese, crumbled bacon, and chopped green onions.
  7. Return to the oven and bake for an additional 10 minutes or until the cheese is melted and bubbly.
  8. Serve the potato skins warm and enjoy.

Notes

Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in the oven to maintain crispiness.
