A colorful and nutritious cauliflower fried rice, perfect for a quick weeknight meal bursting with flavor.

Ingredients

  • 1 medium head of cauliflower, grated or riced
  • 2 tablespoons olive oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 green onions, chopped
  • 2 tablespoons soy sauce
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the grated cauliflower and mixed vegetables, cooking until tender, about 5-7 minutes.
  3. Push the cauliflower mixture to the side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix them into the cauliflower.
  4. Stir in the soy sauce and green onions, cooking for another 2-3 minutes.
  5. Season with salt and pepper, and serve warm.

Notes

For a healthier version, add more vegetables or use low-sodium soy sauce. Feel free to use frozen cauliflower rice for convenience.
