  • 1 cup cashews
  • 2 cups vegetables (such as bell peppers, broccoli, and carrots)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • ¼ cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Mix the soy sauce, oyster sauce, and cornstarch in a bowl; add chicken and let marinate for 15 minutes.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add the marinated chicken to the skillet and cook until browned and cooked through.
  4. Add garlic and ginger, cooking for an additional minute until fragrant.
  5. Add the vegetables and cook until tender-crisp, that crunch is just perfect!
  6. Stir in the cashews and mix well, allowing them to soften slightly in the heat.
  7. Season with salt and pepper to taste, adjusting based on your preference.
  8. Garnish with green onions before serving to give that fresh burst of flavor.
