Delightful carrot cake pops infused with warm spices, coated in creamy white chocolate, perfect for spring celebrations.

Ingredients

  • 1 1/2 cups grated carrots
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • White chocolate or candy melts for dipping
  • Cake pop sticks

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your cake pan.
  2. Combine the grated carrots, flour, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract in a large mixing bowl.
  3. Prepare the dry ingredients by mixing baking powder, baking soda, salt, cinnamon, and nutmeg in another bowl.
  4. Mix the dry ingredient mixture into the carrot mixture until well combined.
  5. Bake the batter in the prepared pan for 25-30 minutes until a toothpick comes out clean.
  6. Cool the cake completely in the pan, then crumble it into a bowl.
  7. Form small portions of crumbled cake into balls and place on a baking sheet.
  8. Melt the white chocolate or candy melts according to package instructions.
  9. Insert the sticks by dipping the end into melted chocolate and inserting it into each cake ball.
  10. Dip each cake ball into melted chocolate and set upright to harden.

Notes

Consider adding nuts or sprinkles for decoration. Store in an airtight container in the refrigerator for up to 5 days.
