A delightful blend of moist carrot cake and creamy cheesecake, perfect for celebrations or a cozy evening at home.

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese
  • 1/2 cup sour cream
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract for cheesecake

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a springform pan.
  2. Combine grated carrots, flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
  3. Whisk together sugar, oil, eggs, and vanilla in another bowl. Add dry ingredients to the wet mixture and mix until combined.
  4. Pour half of the carrot cake batter into the prepared springform pan.
  5. Beat the cream cheese until smooth in a separate bowl. Add sour cream, powdered sugar, lemon juice, and vanilla, mixing until smooth.
  6. Spread the cream cheese mixture over the carrot cake batter in the pan.
  7. Pour the remaining carrot cake batter on top.
  8. Bake for 60-70 minutes or until a toothpick comes out clean.
  9. Let cool, then refrigerate for at least 4 hours before serving.
