A vibrant and crunchy salad featuring sweet carrots, savory sesame, and a tangy dressing, perfect for any meal.

Ingredients

  • 2 large carrots
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon honey
  • 1 teaspoon sesame seeds
  • 1/4 teaspoon grated ginger
  • 1 tablespoon chopped cilantro
  • 1/4 teaspoon black pepper

Instructions

  1. Peel the carrots with a vegetable peeler, removing their outer skin.
  2. Grate the peeled carrots using a fine grater until they transform into thin strips.
  3. Place the grated carrots into a medium-sized bowl.
  4. Create the dressing by whisking together sesame oil, rice vinegar, and soy sauce in a small bowl.
  5. Add honey to the dressing mixture and stir until it dissolves completely.
  6. Grate the fresh ginger and mix it into the dressing.
  7. Pour the dressing over the grated carrots.
  8. Toss the carrots to coat them evenly with the dressing.
  9. Sprinkle sesame seeds over the salad.
  10. Add black pepper to enhance the flavors.
  11. Chop the cilantro and garnish the salad with it.
  12. Toss everything together again and let the salad sit for a few minutes.
  13. Serve immediately or refrigerate for up to an hour.

Notes

Best enjoyed fresh, but can be stored in an airtight container for up to a day.
