A comforting dish of tender chicken infused with Caribbean spices, served over creamy coconut rice with vibrant bell peppers.

Ingredients

  • 1 lb chicken (thighs or breasts)
  • 1 can coconut milk
  • 1 cup chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until translucent, about 3-4 minutes.
  2. Season and Brown the Chicken: Season the chicken with salt, pepper, thyme, and paprika. Add the seasoned chicken to the pot and brown it on both sides, taking about 5-6 minutes.
  3. Combine the Key Ingredients: Add the rice, coconut milk, chicken broth, and both bell peppers to the pot. Stir to combine everything.
  4. Cook to Perfection: Bring the mixture to a boil, then reduce heat to low. Cover the pot and let it simmer for about 20-25 minutes.
  5. Fluff and Serve: Remove the pot from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.
