A vibrant salad bursting with flavors, featuring mixed greens, dried cranberries, feta, and a splash of balsamic vinaigrette.

  • 2 cups mixed salad greens (such as arugula, spinach, and romaine)
  • 1 cup cooked chicken breast, diced
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped pecans or walnuts
  • 1 medium apple, diced (preferably a tart variety like Granny Smith)
  • 1/2 red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette dressing

Instructions

  1. Prepare the Salad Greens: Wash and dry the mixed salad greens thoroughly. Place them in a large salad bowl.
  2. Cook the Chicken: Season and cook the chicken breast until golden and completely cooked through. Allow it to cool before dicing.
  3. Dice the Apple: Chop the apple into small pieces and set aside.
  4. Slice the Red Onion: Thinly slice the red onion and add it to the salad bowl.
  5. Combine Chicken and Nuts: Add the diced chicken with dried cranberries and chopped nuts to the bowl.
  6. Crumble the Feta: Scatter the crumbled feta cheese over the salad.
  7. Dress the Salad: Drizzle balsamic vinaigrette dressing and toss gently to combine.
  8. Taste and Adjust: Taste the salad and adjust seasoning if needed.
  9. Serve Immediately: Serve the salad right away or chill for up to 30 minutes before serving.

Notes

Store leftovers in an airtight container, best enjoyed fresh but can be kept for up to 2 days. Keep dressing separate for crisp greens.
