Delightful Cannoli Cookies that capture the classic flavor of cannoli in a fun cookie form. Soft, chewy, and dotted with mini chocolate chips.

  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 egg
  • 1/2 teaspoon cinnamon (optional)
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the ricotta cheese, powdered sugar, and vanilla extract until smooth. Stir in the mini chocolate chips.
  3. Cream together the softened butter and granulated sugar until creamy. Add the egg and mix well.
  4. Whisk together the all-purpose flour, baking powder, salt, and cinnamon (if using).
  5. Fold the ricotta mixture into the cookie dough until evenly distributed.
  6. Drop generous amounts of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes or until the edges are golden.
  8. Cool for a few minutes, then dust generously with powdered sugar before serving.

Notes

Cookies can be stored in an airtight container for up to 4 days or frozen for up to 3 months. Use room-temperature eggs for a smoother batter.
