Cajun White Chicken Chili

A comforting and flavorful dish featuring tender chicken, zesty Cajun spices, and creamy white beans.

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional toppings: chopped green onions, cilantro, sour cream

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, minced garlic, and bell pepper. Sauté until softened, about 5 minutes.
  2. Add the boneless chicken breasts, along with the Cajun seasoning, salt, and pepper. Cook until the chicken is browned on both sides.
  3. Pour in the chicken broth and bring the mixture to a simmer. Let it cook for about 20 minutes or until the chicken is fully cooked through.
  4. Remove the chicken from the pot, shred it with two forks, and then return it to the pot.
  5. Stir in the rinsed white beans and diced green chilies. Simmer for another 10 minutes.
  6. Serve hot, and sprinkle with your choice of toppings: chopped green onions, fresh cilantro, and a dollop of sour cream if desired.

Notes

Leftovers can be stored in an airtight container for up to 4 days. It’s also freezer-friendly for up to 3 months.
