A vibrant and hearty dish that combines bold flavors of Andouille sausage with tender shrimp and fresh vegetables, perfect for a quick weeknight dinner.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound sausage, sliced (Andouille or your choice)
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Brown the sausage in the skillet until cooked through.
  3. Sauté the diced onion and bell pepper for about 5 minutes until softened.
  4. Add the minced garlic and cook for another minute.
  5. Cook the shrimp until they turn pink.
  6. Sprinkle in the Cajun seasoning and add the halved cherry tomatoes.
  7. Cook for an additional 2-3 minutes until heated through.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley before serving.

Notes
