Ingredients

Scale
  • 2 chicken breasts, sliced
  • 8 oz fettuccine pasta
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the fettuccine according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add sliced chicken breasts and season with Cajun seasoning. Cook until browned and cooked through. Remove chicken from skillet and set aside.
  4. Add bell pepper, onion, and garlic to the same skillet. Sauté until soft.
  5. Stir in heavy cream and Parmesan cheese, and let simmer until the sauce thickens.
  6. Add the cooked pasta and chicken back into the skillet, stirring to combine.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

Leftover pasta can be kept in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove with a splash of milk or cream to revive the sauce.
