  • 1/2 medium head (approx. 450g / 1 lb) green cabbage, thinly sliced
  • 200g / 7 oz dried glass noodles, soaked in hot water until pliable and drained
  • 3 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sugar
  • 12 pieces dried chili pepper (or to taste)
  • 34 cloves garlic, finely minced
  • 12 tablespoons cooking oil (e.g., vegetable, canola)

Instructions

  1. Soak the glass noodles in a bowl of hot water for 5–10 minutes, until soft and pliable. Once they’ve transformed from rigid strands to soft, silky noodles, drain well and set aside.
  2. Prepare the sauce by whisking together light soy sauce, dark soy sauce, and sugar in a small bowl until the sugar is fully dissolved.
  3. Heat cooking oil in a large wok or skillet over medium-high heat.
  4. Sauté dried chili pepper and minced garlic in the hot oil for 30 seconds to 1 minute until fragrant.
  5. Add the thinly sliced cabbage to the wok and stir-fry for 5–7 minutes until softened but still crisp-tender.
  6. Combine the drained glass noodles with the sautéed cabbage in the wok.
  7. Drizzle the prepared sauce evenly over the noodles and cabbage.
  8. Stir-fry for another 3–5 minutes until the sauce is absorbed and the noodles and cabbage are glossy and evenly coated.
  9. Serve the dish immediately, savoring the cozy feeling of a home-cooked meal!
