  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • Cooking spray or additional butter for the skillet

Instructions

  1. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt until combined.
  2. In another bowl, combine buttermilk, egg, and melted butter. Mix until well combined.
  3. Pour the wet mixture into the bowl of dry ingredients. Gently stir until just combined.
  4. Heat a skillet over medium heat and grease with cooking spray or butter.
  5. Using a 1/4 cup measure, pour the batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm, topped with your favorite toppings.

Notes

Do not overmix the batter to ensure fluffy pancakes. Test skillet heat by sprinkling water on it and noting if it sizzles.
