Delicious and magical Butterbeer Cupcakes inspired by the Harry Potter series, perfect for parties and movie nights.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup butterscotch chips
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar
  • 1/4 cup butterscotch sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. Whisk together the flour, baking powder, baking soda, and salt in another bowl. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  5. Fold in the butterscotch chips.
  6. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cupcakes to cool completely.
  9. Whip the heavy cream until it starts to thicken, then gradually add the powdered sugar. Continue to whip until stiff peaks form.
  10. Frost the cooled cupcakes with the whipped cream, then drizzle butterscotch sauce on top before serving.

Notes

Store in an airtight container. Best enjoyed fresh but can be refrigerated for about a week.
