Bulgogi Beef Bowls are a delicious combination of marinated beef, colorful vegetables, and fluffy rice, inspired by traditional Korean flavors.

  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 green onions, chopped
  • 1 cup cooked rice
  • 1 cup sliced vegetables (like bell peppers and carrots)
  • Sesame seeds for garnish

Instructions

  1. Whisk together the marinade: In a mixing bowl, combine soy sauce, brown sugar, sesame oil, garlic, and ginger. Mix well until the sugar dissolves.
  2. Marinate the beef: Add the thinly sliced beef to the marinade, ensuring each piece is well-coated. Cover and let it soak in all that flavor for at least 30 minutes.
  3. Cook the rice: While the beef marinates, cook the rice according to package instructions. This usually takes about 15-20 minutes. Fluff it up once it’s done, and set aside.
  4. Sauté the beef: Heat a skillet over medium-high heat. Add the marinated beef (discard the marinade) and stir-fry for about 5-7 minutes, until the meat is cooked through and starting to caramelize.
  5. Stir-fry the vegetables: In the same skillet, add the sliced vegetables. Stir-fry for an additional 3-4 minutes, just until they’re tender yet crisp.
  6. Assemble and garnish: Serve the beautifully stir-fried beef and vegetables over a generous scoop of cooked rice. Finish with a sprinkle of chopped green onions and sesame seeds for that extra crunch.
