These Buffalo Chicken Quesadillas are bursting with flavor, combining shredded chicken and buffalo sauce with ooey-gooey cheese for a perfect spicy treat.

Ingredients

  • 2 cups cooked, shredded chicken
  • 1/2 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 flour tortillas
  • 1/4 cup diced green onions
  • Cooking spray or oil

Instructions

  1. Mix your chicken with the sauce in a large bowl until well coated.
  2. Prepare the skillet by heating over medium heat and lightly greasing it with cooking spray or oil.
  3. Layer one tortilla in the skillet and sprinkle half with cheese, followed by chicken mixture and green onions.
  4. Grill until golden brown, about 2-3 minutes on each side.
  5. Repeat the process with remaining tortillas and filling.
  6. Cut into wedges and serve warm.

Notes

Serve with creamy ranch or blue cheese dressing for dipping. Leftover quesadillas can be stored in an airtight container in the fridge for up to 3 days.
