A rich, chocolatey dessert combining a fudgy brownie base with a creamy cheesecake layer, perfect for any occasion.

Ingredients

  • 1/2 cup unsalted butter
  • 4 oz dark chocolate
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup plain flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 8 oz cream cheese (softened)
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1 tbsp plain flour
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter and dark chocolate together in a heatproof bowl placed over simmering water, stirring gently until smooth.
  3. Remove from heat, and mix in the eggs, granulated sugar, brown sugar, flour, cocoa powder, and salt until just combined.
  4. Pour this mixture into a greased cake tin, spreading it evenly. Bake for 15-20 minutes.
  5. Beat the softened cream cheese in a mixing bowl until smooth.
  6. Gradually add in the sugar, vanilla extract, sour cream, flour, and heavy cream, continually beating until creamy and well combined.
  7. Once the brownie layer has cooled, gently pour the cheesecake mixture over it.
  8. Bake for another 30-35 minutes.
  9. Remove from the oven and allow it to cool at room temperature, then refrigerate for at least 4 hours.
  10. Once chilled, slice and serve with whipped cream or a sprinkle of cocoa powder.

Notes

Use room temperature ingredients for the cheesecake layer to ensure a smooth texture. Do not overbake the cheesecake.
