A delightful combination of brownies and chocolate chip cookies, Brookies offer the best of both worlds with rich, fudgy layers and chewy cookie dough.

Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder

  • 1/2 cup unsalted butter (for cookie dough)
  • 3/4 cup brown sugar (for cookie dough)
  • 1/2 cup granulated sugar (for cookie dough)
  • 1 large egg (for cookie dough)
  • 1 teaspoon vanilla extract (for cookie dough)
  • 1 cup all-purpose flour (for cookie dough)
  • 1/2 teaspoon baking soda (for cookie dough)
  • 1/2 teaspoon salt (for cookie dough)
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a saucepan over low heat, melt 1 cup of unsalted butter. Mix in 1 cup each of granulated and brown sugar until smooth. Remove from heat and allow cooling before whisking in 4 large eggs and 2 teaspoons of vanilla extract. Gradually fold in 1 cup of cocoa powder, 1 cup of flour, 1/2 teaspoon of baking powder, and salt. Pour the mixture into the baking pan.
  3. In a separate bowl, cream together 1/2 cup unsalted butter, 3/4 cup brown sugar, and 1/2 cup granulated sugar until light and fluffy. Add one large egg and 1 teaspoon of vanilla extract, then mix. Slowly add 1 cup of flour, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt, stirring just until combined. Fold in 1 cup of chocolate chips.
  4. Spoon dollops of the cookie dough over the brownie layer evenly.
  5. Bake for 25-30 minutes until edges are set and a toothpick inserted into the center comes out with moist crumbs.
  6. Let cool for 15 minutes before cutting into bars.

Notes

Brookies can be served with vanilla ice cream or whipped cream. Drizzle with caramel for added flavor.
