Chilaquiles Verdes are a delightful and filling breakfast made with crispy tortilla chips, savory green salsa, and creamy toppings.

Ingredients

  • Corn tortilla chips
  • Green salsa (salsa verde)
  • Eggs
  • Oil for frying
  • Cilantro
  • Onion
  • Cheese (such as feta or cotija)
  • Sour cream
  • Avocado
  • Salt and pepper

Instructions

  1. Heat oil over medium heat and fry the tortilla chips until crispy.
  2. Pour the green salsa over the fried tortilla chips and stir to coat.
  3. Scramble or fry eggs as desired in another pan.
  4. Serve the salsa-coated chips on a plate, topped with the eggs, diced onions, chopped cilantro, crumbled cheese, slices of avocado, and a dollop of sour cream.
  5. Season with salt and pepper to taste.

Notes

Chilaquiles are best served hot and can be paired with extra salsa on the side and a cup of coffee or juice.
