Braised Short Ribs

Tender and flavorful braised short ribs, perfect for family gatherings or special occasions.

Ingredients

  • 4 lbs beef short ribs
  • 2 cups red wine
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Season the short ribs with salt and pepper.
  3. In a large oven-safe pot, heat olive oil over medium-high heat. Sear the short ribs on all sides until browned, then remove and set aside.
  4. In the same pot, add onion, carrots, celery, and garlic. Sauté until softened.
  5. Pour in the red wine and scrape the bottom of the pot to deglaze.
  6. Return the short ribs to the pot and add beef broth, thyme, and rosemary.
  7. Bring to a simmer, then cover and transfer to the oven.
  8. Cook for 150 to 180 minutes, or until the meat is tender and falling off the bone.

Notes

Braised short ribs are best served hot from the oven. They pair beautifully with creamy mashed potatoes or crusty bread.
