A delightful mash-up of textures and flavors featuring smooth cheesecake atop a chocolate crust, draped in silky chocolate ganache.

Ingredients

  • 1 ½ cups chocolate cookie crumbs
  • ½ cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • ½ cup heavy cream
  • 2 oz semi-sweet chocolate, melted
  • 1 cup chocolate ganache
  • Chocolate chips for topping

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine chocolate cookie crumbs and melted butter; press this mixture firmly into the bottom of a 9-inch springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add vanilla and eggs, one at a time, mixing well after each addition.
  5. Stir in the sour cream and melted chocolate until well combined.
  6. Pour the cream cheese mixture over the crust in the springform pan.
  7. Bake for about 50-60 minutes, or until the center is set but still slightly jiggles.
  8. Allow the cheesecake to cool completely, then refrigerate for at least 4 hours or overnight.
  9. Once chilled, top with chocolate ganache and sprinkle chocolate chips on top.
  10. Finally, slice and serve your masterpiece!

Notes

Ensure cream cheese and eggs are at room temperature for a creamy texture. Use a water bath to prevent cracks during baking.
