A delightful and healthy salad combining sweet blueberries with fresh spinach, perfect for lunch or as a side dish.

Ingredients

  • 4 cups fresh spinach
  • 1 cup blueberries
  • ½ cup feta cheese, crumbled
  • ¼ red onion, thinly sliced
  • ½ cup walnuts, chopped
  • ¼ cup olive oil
  • 2 tbsp balsamic vinegar
  • salt, to taste
  • pepper, to taste

Instructions

  1. In a large bowl, combine fresh spinach and blueberries.
  2. Add feta cheese, red onion, and walnuts to the bowl.
  3. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Serve immediately.

Notes
