Delightful blueberry scones perfect for breakfast or an afternoon tea treat.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh blueberries
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the all-purpose flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold, cubed unsalted butter until it resembles coarse crumbs.
  4. Fold in the fresh blueberries gently.
  5. Whisk together the milk, egg, and vanilla extract in another bowl.
  6. Add the wet mixture to the flour mixture and stir until just combined.
  7. Turn the dough onto a floured surface and knead gently, then pat it into a circle about 1 inch thick.
  8. Cut the dough into wedges and place them on a lined baking sheet.
  9. Bake for 15-20 minutes or until golden brown.

Notes

Serve warm with butter or clotted cream. They can be stored in an airtight container for up to 2 days.
