Delightful Blueberry Lemon Bars with a buttery crust and vibrant blueberry filling, capturing the essence of summer.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon salt
  • 2 cups fresh blueberries
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking dish.
  2. Combine the all-purpose flour, powdered sugar, melted butter, and salt. Mix until crumbly, then press into the bottom of the prepared baking dish.
  3. Mix together the fresh blueberries, granulated sugar, eggs, fresh lemon juice, lemon zest, and baking powder until just combined.
  4. Pour the blueberry mixture over the crust, spreading it evenly.
  5. Bake for 25-30 minutes, or until the filling is set and has a light golden color.
  6. Cool in the baking dish before slicing into squares.

Notes

For a gluten-free version, use a gluten-free flour blend. Store leftovers in the refrigerator for up to 3 days or freeze for up to a month.
