A rustic blueberry galette that showcases the natural sweetness of fresh blueberries, perfect for summer gatherings.

  • 2 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 pie crust (store-bought or homemade)
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)
  • 1/2 teaspoon cinnamon (optional)
  • Powdered sugar (for serving, optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix blueberries, lemon juice, granulated sugar, cornstarch, vanilla extract, and cinnamon.
  3. Roll out the pie crust on a baking sheet lined with parchment paper.
  4. Pour the blueberry mixture into the center of the crust, leaving a 2-inch border.
  5. Fold the edges of the crust over the filling.
  6. In a small bowl, whisk together the egg and milk, and brush the mixture over the crust.
  7. Bake for 35-40 minutes or until the crust is golden and blueberries are bubbling.
  8. Let cool slightly, then dust with powdered sugar before serving.

Notes

Serve warm or at room temperature. It pairs well with ice cream or whipped cream.
