A rustic blueberry galette showcasing fresh blueberries enveloped in flaky pastry, perfect for summer.

Ingredients

  • 2 cups fresh blueberries
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 6 tablespoons unsalted butter, chilled and diced
  • 1/4 cup ice water
  • 1 egg (for egg wash)
  • Additional sugar for sprinkling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the flour, granulated sugar, salt, and cinnamon in a mixing bowl.
  3. Add the chilled, diced butter and cut it into the flour mixture.
  4. Stir in the ice water, adding a tablespoon at a time, until the dough comes together.
  5. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  6. Roll out the dough into a 12-inch circle on a floured surface.
  7. Place the fresh blueberries in the center, leaving a 2-inch border.
  8. Fold the edges of the dough over the blueberries.
  9. Brush the crust with a beaten egg and sprinkle with additional sugar.
  10. Bake for 35-40 minutes until golden brown and bubbling.
  11. Cool slightly before serving.

Notes

Serve warm or at room temperature, ideally with vanilla ice cream or whipped cream.
