A delicious and heartwarming blueberry French toast casserole perfect for gatherings.

  • 1 loaf (450g) French bread, cubed
  • 8 large eggs
  • 2 cups (480ml) milk
  • 1/2 cup (100g) granulated sugar
  • 1 teaspoon (5ml) vanilla extract
  • 1 teaspoon (5g) ground cinnamon
  • 1/4 teaspoon (1g) salt
  • 2 cups (300g) fresh blueberries
  • 1/2 cup (100g) brown sugar
  • 1/4 cup (30g) all-purpose flour
  • 1/4 cup (55g) unsalted butter, cubed

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch (23×33 cm) baking dish.
  2. Carefully arrange the cubed French bread evenly in the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.
  4. Pour the egg mixture evenly over the bread cubes, pressing down gently to soak.
  5. Sprinkle the fresh blueberries evenly over the soaked bread.
  6. In a small bowl, mix the brown sugar and flour, cutting in the cubed butter until crumbly.
  7. Sprinkle the crumb mixture over the blueberries.
  8. Place the baking dish in the oven and bake for 45-50 minutes until golden brown and set.
  9. Let the casserole cool for about 10 minutes before serving.
  10. Serve warm, optionally with maple syrup or powdered sugar.

Notes

Great for lazy weekends; can be prepared the night before. Add extra berries for variation.
