A silky, sweet-tart blueberry curd that captures the essence of summer.

Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup granulated sugar
  • 3 large egg yolks
  • 1/4 cup fresh lemon juice
  • 1/4 cup unsalted butter
  • 1 teaspoon lemon zest
  • Pinch of salt

Instructions

  1. Combine blueberries and sugar in a saucepan over medium heat, stirring until the blueberries have released their juices.
  2. Strain the mixture to remove the solids, returning the juice to the pan.
  3. Whisk in egg yolks and lemon juice into the strained blueberry juice and cook over low heat, stirring constantly until thickened.
  4. Stir in butter, lemon zest, and salt until smooth.
  5. Cool the curd completely in a jar before using.

Notes

Store in an airtight container in the fridge for up to 2 weeks. Stir before each use.
