A delightful and vibrant spread made with fresh blueberries, perfect for pastries, cakes, or as a topping.

Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup sugar
  • 2 eggs
  • 1/4 cup unsalted butter
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions

  1. Combine blueberries and sugar in a saucepan; cook over medium heat until blueberries have released their juices.
  2. Strain the mixture to remove solids, returning the juice to the saucepan.
  3. Add the eggs, butter, lemon juice, and salt to the saucepan, whisking until smooth.
  4. Cook on low heat, stirring constantly until thickened (around 10 minutes).
  5. Remove from heat and let cool before using.

Notes

For best flavor, use fresh blueberries. Store in an airtight container in the refrigerator for up to a week.
