Delightful dessert bars with a buttery crumb topping and a sweet blueberry filling, perfect for any occasion.

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Cream together the butter, granulated sugar, brown sugar, and vanilla until smooth.
  3. Whisk together the flour, baking powder, and salt in another bowl. Gradually add the dry ingredients to the butter mixture, mixing until crumbly.
  4. Press half of the crumb mixture into the prepared baking dish.
  5. Mix the blueberries, lemon juice, and cornstarch in a small bowl. Spread this mixture over the crumb layer in the dish.
  6. Crumble the remaining crumb mixture over the top of the blueberries.
  7. Bake for 45-50 minutes, or until the top is golden brown.
  8. Allow to cool before cutting into bars.

Serve warm or at room temperature, with optional toppings like vanilla ice cream or whipped cream.
