  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup blueberries
  • 1/2 cup cream cheese
  • 1/4 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) to get it nice and hot for your cookies!
  2. Mix together the flour, baking soda, and salt in a bowl. This mixture will give your cookies structure.
  3. Cream together the softened butter and granulated sugar until the mixture is fluffy, about 3-4 minutes.
  4. Beat in the egg and add the vanilla extract, blending the warm flavors.
  5. Combine the flour mixture with the wet ingredients, mixing just until combined. Don’t overmix; a few specks of flour are perfectly fine!
  6. Blend the cream cheese, powdered sugar, and blueberries in a separate bowl until well combined.
  7. Roll out the dough on a floured surface and use a cookie cutter to create rounds.
  8. Fill half the cookie rounds with spoonfuls of blueberry cream, topping with the remaining rounds and sealing the edges.
  9. Bake the cookies on a baking sheet for 12-15 minutes until lightly golden.
  10. Let cool on a wire rack before serving.

Notes

For best results, ensure your butter is at room temperature and cream cheese is well-blended with the blueberries.
