Heavenly Blueberry Cream Cheese Loaf

A delightful loaf combining rich cream cheese and juicy blueberries, perfect for breakfast or as a sweet snack.

Ingredients

  • 2 cups all-purpose flour (sifted)
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup milk (or almond milk)
  • 1 cup fresh blueberries (or thawed frozen blueberries)
  • 8 oz cream cheese, softened (mixed with 1/4 cup of sugar)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5 inch loaf pan with butter or line it with parchment paper.
  3. Whisk together the sifted flour, baking powder, and salt, and set aside.
  4. Beat the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  5. Add the eggs one at a time, mixing well, then stir in the vanilla extract.
  6. Alternate adding the dry ingredients and milk to the butter mixture, starting and ending with flour.
  7. Fold in the fresh blueberries gently.
  8. Mix the softened cream cheese with 1/4 cup of sugar until smooth.
  9. Pour half of the batter into the prepared loaf pan, then dollop the cream cheese mixture over the center and top with the remaining batter.
  10. Bake for 55-60 minutes until a toothpick comes out clean.
  11. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 2 months.
