A moist and rich bread featuring the delightful combination of sweet blueberries and creamy cheese, perfect for breakfast or dessert.

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Cream together the softened butter and sugar until light and fluffy.
  4. Beat in the eggs, one at a time, then stir in the milk and vanilla extract.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. In a small bowl, mash the cream cheese with a fork until smooth.
  7. Gently fold the cream cheese and blueberries into the batter until evenly distributed.
  8. Pour the batter into the prepared loaf pan, spreading it evenly.
  9. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
