A nutritious and easy-to-make pudding that serves as a comforting breakfast or snack.

  • 1 cup milk (or non-dairy milk)
  • 1 cup fresh blueberries
  • 12 tablespoons sweetener (honey, maple syrup, or agave) – optional
  • 1 teaspoon vanilla extract – optional

Instructions

  1. Combine ingredients: In a bowl, whisk together chia seeds, milk, sweetener, and vanilla extract until combined.
  2. Allow to rest: Let the mixture sit for about 10 minutes, then stir again to prevent clumping.
  3. Add fresh blueberries and give everything a gentle stir.
  4. Refrigerate: Pour the mixture into a jar or container and refrigerate overnight, or at least for 4 hours until it thickens.
  5. Serve & enjoy: Serve chilled, topped with additional blueberries if desired.

Notes

For best results, let the pudding set overnight. Adjust sweetness based on your preference!
