Delicious blueberry cheesecake crumb bars with a buttery graham cracker crust, perfect for summer gatherings.

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup sugar
  • 1 package (8 oz) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups fresh blueberries
  • ½ teaspoon lemon juice
  • ½ teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking pan.
  2. Create the graham cracker crust by mixing together the graham cracker crumbs, melted butter, and sugar.
  3. Press the mixture into the bottom of the prepared pan to form a solid crust.
  4. Mix the softened cream cheese, sugar, and vanilla until smooth. Add the eggs one at a time, mixing well after each addition.
  5. Fold in the lemon juice and fresh blueberries, being careful not to crush them.
  6. Prepare the crumble topping by mixing melted butter with graham cracker crumbs and cinnamon, then sprinkle it over the cheesecake layer.
  7. Bake in the preheated oven for about 40-45 minutes, until the edges are set and the center is slightly jiggly.
  8. Cool completely and refrigerate for at least 2 hours before slicing into bars.
