  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup blood orange juice
  • Zest of 2 blood oranges
  • 3 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cream cheese (for frosting, optional)
  • 1 cup powdered sugar (for glaze, optional)
  • 12 tablespoons blood orange juice (for glaze, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a bundt pan to ensure your cake slides out easily after baking.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the blood orange juice and zest.
  5. Whisk together the flour, baking powder, baking soda, and salt in another bowl. Gradually add this to the wet mixture, mixing until just combined.
  6. Pour the batter into the prepared bundt pan and smooth the top with a spatula.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Cool the cake and then remove from the pan. For the glaze, mix powdered sugar with blood orange juice until smooth, or spread cream cheese frosting on top.

Notes
