A tender, zesty cake infused with fresh blood orange juice and zest, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup blood orange juice
  • 1 tablespoon blood orange zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Powdered sugar (for glaze or frosting)
  • Additional blood orange juice (for glaze)
  • Cream cheese (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the blood orange juice and zest.
  4. Combine the flour, baking powder, baking soda, and salt in a separate bowl, then gradually add to the wet mixture.
  5. Pour the batter into the prepared cake pan and bake for 30-35 minutes or until a toothpick inserted comes out clean.
  6. Cool the cake in the pan for 10 minutes before transferring it to a wire rack.
  7. Mix powdered sugar with blood orange juice for the glaze, or prepare cream cheese frosting.
  8. Drizzle with glaze or frost with cream cheese frosting before slicing and serving.

Notes

For best results, use room temperature eggs and don’t overmix the batter. Check for doneness a few minutes early.
