A light and vibrant salad featuring the sweet tartness of blackberries, creamy avocado, and peppery arugula, topped with feta and walnuts.

Ingredients

  • 4 cups arugula
  • 1 cup blackberries
  • 1 medium avocado
  • 1/4 cup thinly sliced red onion
  • 1/3 cup crumbled feta cheese
  • 1 small shallot
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 2 tablespoons chopped walnuts
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the arugula under cold water to remove any dirt, then pat it dry gently with a cloth or paper towel. Place it in a large serving bowl.
  2. Add the blackberries, gently tossing them in.
  3. Peel and slice the avocado into thick chunks, then add it to the bowl.
  4. Thinly slice the shallot and red onion, then add them to the salad.
  5. Sprinkle the crumbled feta cheese over the top.
  6. Whisk together the olive oil, lemon juice, honey, salt, and pepper in a small bowl until combined.
  7. Drizzle the dressing evenly over the salad.
  8. Sprinkle the chopped walnuts on top and toss lightly to combine.
  9. Serve immediately for the best experience.

Notes

For a vegan option, omit the feta. The salad is best enjoyed fresh but can be stored for one day in the fridge.
